Shading is done using traditional honzu (reed screen) methods for 20-30 days before harvest, developing the sweet umami character and vibrant color. Only first-flush spring leaves are selected for ceremonial grades, hand-picked at peak tenderness. After steaming to halt oxidation, leaves are carefully dried and stored in temperature-controlled facilities. The grinding process uses traditional stone mills, with each mill producing only 30-40 grams per hour.
