The plants are shaded for 20-30 days before harvest, a crucial step that increases chlorophyll content and creates the vibrant green color and sweet umami flavor characteristic of premium matcha. Only the youngest, most tender leaves are hand-picked during the first flush in spring. These leaves are then steamed, dried, and stone-ground in traditional granite mills at a painstakingly slow pace—it takes one hour to grind just 40 grams of matcha. This slow grinding prevents heat buildup that could compromise flavor and ensures the finest, silkiest texture.
